Recipe and use of water kefir

Transform your well-being with a few simple ingredients

Natural Probio helps you make your own fermented drink using water kefir grains or fruit kefir, so you can enjoy its magic with complete peace of mind.

Find out absolutely everything, including the care, conservation, contraindications and nutritional benefits of these little crystals.

Before you begin

Activate the grains to awaken the microorganisms and optimize fermentation. Without this essential step, your drink will not be successful.

Follow the activation process

  • Pour no more than 30cl of water (tap or mineral) into a small, clean glass jar
  • Add 40g of caster sugar (brown or white, raw or refined, according to your preferences)
  • Mix well to dissolve the sugar
  • Rinse your grains and dip them in the sweet mixture along with a dried fig (obligatory)
  • Cover the jar with a clean cloth or a loose lid and let it ferment at room temperature (20-25°C) for 24 hours away from light.
  • After this time, bubbles should appear and the grains should have risen to the surface. Drain and rinse the grains using a plastic strainer (avoid metal) , discard the first water and start again with a new mixture of sugar water and fig.
  • Repeat this process 4-5 times to ensure optimal activation

Once activated, your grains are ready to produce Water Kefir regularly.

Ingredients: What you need for 1 liter of water kefir

  • Water kefir grains: 30 grams or 2 tablespoons
  • Water: 1 liter (non-chlorinated)
  • Sugar: 4 tablespoons
  • Dried figs:
  • Lemon or orange: 1, cut into wedges
  • Glass jar: capacity of at least 1.5 liters

The preparation

  1. Prepare the mixture

In a clean glass jar, pour the water and sugar, stir to dissolve the sugar then add the rest of the ingredients: the kefir grains, the figs and the citrus fruit of your choice.

Cover the jar with a cloth or loose lid to allow air to circulate.

  1. Let it ferment

Let ferment at room temperature for 24 to 48 hours away from light. Observe:

✅The fruit will rise to the surface when fermentation is sufficient.

  1. Filter and separate

Once the fruit has risen and bubbles have formed, remove it. Squeeze the citrus fruit into the mixture to intensify the flavor, then strain through a plastic strainer, transferring the kefir to an airtight bottle to separate the grains.

  1. Let it ferment a second time

Let it ferment away from light for 24 hours before refrigerating. Consume the drink for up to 7 days and always keep it refrigerated.

✅To add more flavor, you can add other fruits, herbs, or spices to the second fermentation. Experiment and create your own natural superfood drink.

💡The longer you let it ferment, the more sparkling and tangy the drink will become.

  1. Save the grains and reuse them

Store the grains in a little sugar water for up to a month, they will remain alive and continue to grow.

They can be reused immediately. It is possible to rinse them in cold water ( optional ) before starting a new fermentation. Remember to change the sugar storage water every week.

What if my kefir doesn’t sparkle?

This could simply be due to a too-short fermentation at too low a temperature or a lack of sugar. Check the fermentation time and conditions, and you’ll soon be back to refreshing bubbles.

Contraindications: Who should be careful?

❌Pregnant women (Fermentation generates a tiny amount of alcohol, less than 0.5%. Although this content is low and kefir is considered a non-alcoholic beverage, it is best to seek professional advice.)
