Before you begin
Activate the grains to awaken the microorganisms and optimize fermentation. Without this essential step, your drink will not be successful.
Follow the activation process
Once activated, your grains are ready to produce Water Kefir regularly.
Ingredients: What you need for 1 liter of water kefir
The preparation
In a clean glass jar, pour the water and sugar, stir to dissolve the sugar then add the rest of the ingredients: the kefir grains, the figs and the citrus fruit of your choice.
Cover the jar with a cloth or loose lid to allow air to circulate.
Let ferment at room temperature for 24 to 48 hours away from light. Observe:
The fruit will rise to the surface when fermentation is sufficient.
Once the fruit has risen and bubbles have formed, remove it. Squeeze the citrus fruit into the mixture to intensify the flavor, then strain through a plastic strainer, transferring the kefir to an airtight bottle to separate the grains.
Let it ferment away from light for 24 hours before refrigerating. Consume the drink for up to 7 days and always keep it refrigerated.
To add more flavor, you can add other fruits, herbs, or spices to the second fermentation. Experiment and create your own natural superfood drink.
The longer you let it ferment, the more sparkling and tangy the drink will become.
Store the grains in a little sugar water for up to a month, they will remain alive and continue to grow.
They can be reused immediately. It is possible to rinse them in cold water ( optional ) before starting a new fermentation. Remember to change the sugar storage water every week.
Dehydrate your grains
For long-term storage, gently dry the beans and store them in an airtight container for up to 1 year at room temperature. For reuse, activate as directed above.
Freeze your grains
You can freeze your beans for up to 1 year in an airtight container. To reuse them, activate them as described above.
With minimal care, your seeds will multiply on their own and can last a lifetime.

Watch out for signs of contamination
If your beans change color (pink, orange, brown, black, etc.), it’s time to replace them. Do not consume the beverage prepared with them.

What if my kefir doesn’t sparkle?
This could simply be due to a too-short fermentation at too low a temperature or a lack of sugar. Check the fermentation time and conditions, and you’ll soon be back to refreshing bubbles.
