Recipe
  1. In a 1 litre jar, dissolve 40g of sugar in lukewarm non-chlorinated water.
  2. Add 1 to 2 tablespoons of freshly grated ginger (organic if possible).
  3. Add the 20g of GBP grains and top up with cold water.
  4. Cover with a cloth and let ferment 48 to 72h at room temperature (20-25 C).
  5. Strain out the grains and ginger. Bottle and refrigerate.
💡 Tip: add the juice of half a lemon for a livelier ginger beer. For more fizz, leave 12-24h in a sealed bottle before refrigerating.

  • Anticoagulant treatment: ginger can interact with blood-thinning medicines

How do I make homemade ginger soda?

Strain, bottle in airtight bottles and leave 1-2 more days for natural carbonation.

What is the difference with water kefir?

The ginger beer plant and water kefir are two different cultures with distinct microbial compositions. The GBP specifically produces a drink with a true ginger beer taste, spicier and with a more intense carbonation. GBP grains are usually smaller and translucent. Water kefir is more versatile, while the GBP excels at making authentic ginger beer.

Do the grains multiply?

Yes, under good conditions the ginger beer plant grains multiply with each fermentation. With regular care, one purchase gives you a culture for life, with plenty to share.

Is my drink alcohol-free?

Yes. The drink you make is a soft drink, like water kefir or kombucha. As with every naturally fermented beverage, fermentation may leave minute residues, far below the threshold used for alcohol-free labelling, and our short fermentation times keep them minimal.

How do I store ginger beer plant grains?

Between two batches, keep the grains in sweetened water in the fridge and change the water weekly. For a longer break, drain the grains, place them in a zip bag and freeze them: they reactivate within 2-3 fermentations.
