Water kefir

24-48h fermentation · 100% plant-based · Naturally fizzy

🚀 First activation of your grains

Before brewing your first kefir, activate the grains:

Rinse your grains with tap water
Take a small glass jar of 50 cl maximum
Add the grains, tap or mineral water, 40 g of sugar and a dried fig
Repeat every 24 to 48h until bubbles appear
💡Be patient: grains wake up over 4 to 5 cycles. Place the jar near a source of warmth.

📋 Water kefir recipe

Ingredients for 1 litre:

  • 1 litre of filtered or spring water
  • 60 g of sugar (raw cane, whole cane or white)
  • 30 to 50 g of kefir grains
  • 1 organic unsulphured dried fig
  • 1/2 lemon cut into slices
1 L
Water
60 g
Sugar
30-50 g
Grains
Dissolve the sugar in the water in a glass jar
Add the kefir grains, the fig and the lemon
Cover with a clean cloth held by a rubber band (never airtight)
Let ferment 24 to 48h at 20-25°C, away from direct sunlight
When the fig floats up, strain through a plastic sieve
Sign of success: the fig rises to the surface. The drink is slightly cloudy, fizzy and much less sweet.

🫧 Second fermentation for bubbles

Pour your kefir into flip-top bottles with a little fruit. Leave 24-48h at room temperature, then refrigerate.

Variations:

  • Lemon: 1 slice per bottle
  • Ginger: 1 small piece of fresh ginger
  • Strawberry: 2-3 cut strawberries
  • Raspberry: 4-5 raspberries
  • Mint: 2-3 fresh leaves
⚠️Never go past 48h in a sealed bottle. Open for 2 seconds over the sink every 12h to release the pressure.

❄️ Storing your grains

  • Regular use: keep them in sugar water at room temperature, refresh every 48h
  • 1-2 week break: jar with water + sugar in the fridge, change the bath every 7 days
  • 2-4 week break: in the fridge in sugar water, change the bath every 15 days
  • Freezing (6 months max): rinse, dry on a clean cloth, place in a freezer bag
  • Dehydrating (1 year): spread on baking paper, air-dry for 3-5 days
💡After freezing or dehydrating, allow 4-5 activation cycles before fermentation is back to full strength.

🔧 Common troubleshooting

  • Grains not growing: switch sugar (try raw or whole cane sugar), check your water is not chlorinated
  • Vinegar smell: fermentation too long, reduce to 24h and increase the sugar dose
  • Flat taste, no bubbles: grains still activating, keep going for 4-5 cycles. Add a small piece of fresh ginger to stimulate them
  • White film on the surface: normal yeast (kahm), harmless, but remove it and shorten the fermentation time
  • Slimy grains: rinse thoroughly, change jar. If it persists, add a pinch of baking soda to the rinsing water
  • Mould (green, black, fuzzy): throw everything away without hesitation. Contact us for a free replacement (lifetime guarantee)

✅ Best practices

  • Utensils: no reactive metal (aluminium, copper). Use plastic, wood, stainless steel or glass
  • Water: filtered or spring water. Chlorinated tap water slows fermentation. Tip: let the water sit 2h in an open jug so the chlorine evaporates
  • Sugar: raw cane, whole cane or white. Never honey, stevia or sweeteners. Whole cane sugar brings minerals that feed the grains
  • Temperature: 20-25°C is ideal. Below 18°C the grains hibernate. Above 30°C fermentation races ahead
  • Light: away from direct sunlight, but a bright kitchen corner is fine
  • Ratio: 30-50 g of grains per litre, no more. Too many grains = fermentation too fast and unbalanced
  • Jar: glass only, never plastic for fermenting. Cover with a cloth, never airtight (the CO2 must escape)

💧 Water guide for kefir

Water is the main ingredient. Its quality directly influences fermentation:

  • Spring water (ideal): rich in minerals, chlorine-free. The grains love it
  • Filtered water (Brita-type jug): very good, removes chlorine and excess limescale
  • Tap water: works if it is not too chlorinated. Let it sit 2h in the open air
  • Bottled mineral water: fine, but check it is not too low in minerals
  • Distilled / reverse-osmosis water: avoid, too low in minerals. The grains weaken
💡If your grains are stalling, change the water first. Simply switching to spring water often relaunches fermentation within 2-3 cycles.

🌡️ Adapting fermentation to the season

Summer (25-35°C): fermentation in 12-24h, reduce sugar to 50 g/L, taste more often. The fig rises very quickly.

Winter (15-20°C): fermentation in 48-72h, keep 60 g of sugar/L, place the jar near a radiator or wrap it in a tea towel. Patience!

Spring and autumn (20-25°C): perfect conditions, follow the standard recipe (24-48h).

🌡️The most reliable indicator is still the fig: when it floats up, it is ready, whatever the season.

🍹 10 second-fermentation recipes

Bottle in flip-top bottles with the ingredients below, per 50 cl:

  • Lemon-ginger: 1 lemon slice + 2 cm of grated fresh ginger
  • Strawberry-basil: 3 cut strawberries + 2 basil leaves
  • Raspberry: 5-6 crushed raspberries (ultra fizzy!)
  • Mango-passion fruit: 2 tbsp of mango purée + the pulp of one passion fruit
  • Mint-cucumber: 3 mint leaves + 3 cucumber slices
  • Peach: 1/2 peach, finely diced
  • Apple-cinnamon: 2 tbsp of apple juice + 1 cinnamon stick
  • Hibiscus: 1 tsp of dried hibiscus flowers (gorgeous pink colour)
  • Lavender-lemon: 1/2 tsp of culinary lavender + lemon zest
  • Plain sparkling: just add 1 tsp of sugar for carbonation
⚠️Open the bottles over the sink every 12h. High-sugar fruits (mango, grapes) produce a lot of gas. Never go past 48h in a sealed bottle.

🔍 Visual check of your grains

How do you know your grains are healthy?

  • Translucent, crystal-like: healthy, active grains. Perfect!
  • Opaque white: healthy grains, they may just lack minerals
  • Brownish: normal if you use raw or whole cane sugar. No worries
  • Pinkish: normal if you fermented with red fruits
  • Very small, sandy: stressed grains. Change water, sugar, and check the temperature
  • Slimy, stringy: bacterial imbalance. Rinse well, change jar, add a pinch of baking soda to the rinse
  • Green/black/fuzzy growth: mould! Throw everything away. Contact us for a free replacement

💪 What is in water kefir

  • Live cultures: billions of bacteria and yeasts in every glass
  • 100% plant-based: suitable for vegans and anyone avoiding dairy
  • Low in sugar: the grains consume 80-90% of the sugar during fermentation
  • B vitamins (B1, B6, B12) produced by the bacteria
  • Organic acids: lactic and acetic acid, which give kefir its fresh tang
  • Hydrating: a naturally fizzy alternative to soft drinks
  • Enzymes naturally produced during fermentation
Start with a small glass (10-15 cl) per day and increase gradually to let your body get used to it.

🚫 Frequent mistakes to avoid

  • Sealing the jar airtight: the CO2 can shatter the jar. Always a cloth with a rubber band
  • Using honey or agave syrup: antibacterial properties that kill the grains
  • Rinsing the grains every cycle: pointless and stressful for the grains. Only rinse when something is wrong
  • Adding too many grains: max 50 g/L. Too many grains = unbalanced fermentation and a vinegary taste
  • Using a plastic jar: plastic releases micro-particles under acidity. Glass only
  • Giving up after 2 cycles: grains need 4-5 cycles to fully wake up after transport
  • Direct sunlight: UV rays destroy the beneficial bacteria

Milk kefir

24h fermentation · 50+ live cultures · Creamy

🚀 First activation

Activate your grains by placing them in a small jar (30 cl) with a little milk for 24h. Repeat until the milk sets evenly (20-25°C).

How time changes the result:

  • 24h: mild, creamy, lightly tangy
  • 24-36h: fizzier and more tart
💡Storage: in the fridge in milk, max 2 weeks without use.

📋 Milk kefir recipe

Ingredients for 1 litre:

  • 1 litre of organic whole milk (pasteurised or raw, never UHT or skimmed)
  • 30 to 50 g of milk kefir grains
1 L
Whole milk
30-50 g
Grains
24-36h
Fermentation
Pour the milk into a clean glass jar
Add the kefir grains
Cover with a clean cloth held by a rubber band
Let ferment 24 to 36h at 20-25°C
Strain through a plastic sieve

🧑‍🍳 Variations and transformations

  • Drinking kefir: 24h of fermentation, strain
  • Fresh cheese (labneh): 36-48h, drain in a cloth 12-24h in the fridge
  • Flavoured: vanilla, honey, fresh fruit after straining
  • Smoothie: blend with banana + red berries + honey
⚠️UHT or plant milk: the grains wear out and die. Use whole animal milk that is not UHT.

❄️ Storing milk kefir grains

  • Regular use: in fresh milk in the fridge, renew every 7 days
  • 1-2 week break: jar with fresh milk in the fridge, do not touch
  • 3-4 week break: rinse and place in sugar water (1 tbsp per 500 ml) in the fridge
  • Freezing (6 months): rinse, dry gently, freeze in an airtight bag
💡After a long break, the first 2-3 batches may be less good. Keep going, the grains recover quickly.

🔧 Milk kefir troubleshooting

  • The milk does not set: temperature too low (below 18°C), grains still activating, or UHT milk
  • Whey/curd separation: fermentation too long. Reduce to 24h or add more milk
  • Grainy texture: normal at first. Strain and blend if you prefer a smooth texture
  • Too tart: shorten the fermentation time or increase the amount of milk
  • Grains shrinking: change milk (switch to raw or organic whole milk), check the temperature
  • Unpleasant smell (not sour, but rancid): discard the batch, rinse the grains, start again with fresh milk

💪 What is in milk kefir

  • 50+ strains of live bacteria and yeasts
  • Naturally contains calcium and B and K2 vitamins
  • Proteins broken down by fermentation
  • Lactose reduced by 70-80% thanks to the lactic bacteria
  • Kefiran: a polysaccharide unique to milk kefir grains
Milk kefir is one of the most culture-rich fermented foods you can make at home, far ahead of industrial yogurts.

🥛 Which milk should I use?

The choice of milk influences the texture, the taste and the health of the grains:

  • Raw milk (the best): rich in natural enzymes and bacteria. Very happy grains, creamy kefir
  • Organic pasteurised whole milk: excellent choice, easy to find in shops
  • Standard pasteurised whole milk: works very well too
  • Semi-skimmed milk: works, but the kefir is less creamy and the grains grow less
  • Goat milk: excellent! Lighter kefir, slightly tangy
  • Sheep milk: ultra creamy, rich kefir with a distinctive taste
⚠️Milks to avoid at all costs: UHT (denatured proteins, the grains die), skimmed (not enough nutrients), plant milk (soy, almond, oat: the grains cannot feed on it and wear out in 2-3 cycles).

🌡️ Adapting to the season

Summer (25-35°C):

  • Reduce fermentation to 12-18h instead of 24h
  • If the milk separates (curd + whey), it went too long: reduce further
  • Add a little more milk to slow the fermentation down

Winter (15-20°C):

  • Ferment 24-36h, or even 48h if your kitchen is cold
  • Place the jar on a switched-off radiator (residual warmth) or in a cupboard above the oven
  • Reduce the amount of milk to speed things up (250 ml for 30 g of grains)

🍨 Recipes with milk kefir

  • Plain drinking kefir: strain at 24h, add a drizzle of honey or maple syrup
  • Kefir smoothie: blend 200 ml of kefir + 1 banana + a handful of red berries + 1 tsp of honey
  • Labneh (fresh cheese): ferment 36-48h, drain in a cloth 12-24h in the fridge. Add salt, herbs, olive oil
  • Frozen kefir: blend kefir + frozen fruit + honey, freeze 4h stirring every hour
  • Salad dressing: kefir + mustard + lemon + fresh herbs. Replaces cream
  • Fluffy pancakes: replace the milk with kefir in your recipe. Ultra airy result
  • Face mask: plain kefir on the face for 15 min, rinse. A classic home beauty tip

🔍 Visual check of milk kefir grains

  • White, cauliflower-like: healthy, active grains. Normal size: 5-15 mm
  • Yellowish: normal with whole milk. No worries
  • Very large (3 cm+): separate them, give away the extras or freeze them as a backup
  • Very small, flattened: stressed grains. Change milk (switch to organic or raw), check the temperature
  • Slimy, stringy coating: rinse gently with cold water (exceptionally), change jar
  • Rancid smell (not sour): contamination. Rinse, discard the batch, start again with fresh milk

🚫 Frequent milk kefir mistakes

  • Using UHT milk: mistake number 1. The denatured proteins kill the grains within a few cycles
  • Rinsing the grains between cycles: pointless and counterproductive. The grains keep a protective coating
  • Sealing airtight: the CO2 must escape. Cloth + rubber band
  • Using reactive metal: an aluminium sieve damages the grains. Use plastic or stainless steel
  • Throwing away the whey: it is full of proteins, live cultures and minerals. Drink it or use it in cooking
  • Switching to plant milk: the grains do not survive. If you want a dairy-free kefir, use water kefir grains

Kombucha

7-14 day fermentation · Naturally fizzy fermented tea

🚀 Activating the culture

Place your SCOBY with its starter liquid in cooled, sweetened black tea:

  • 300 ml of water
  • 3 black tea bags
  • 50 g of sugar

Leave for 6-8 days. A new SCOBY forms on the surface. Repeat if needed until you get a SCOBY 2-3 mm thick.

💡Storage: at room temperature in its liquid, up to 6 months. Add 100 ml of sweetened tea every month.

📋 Kombucha recipe

Ingredients for 1 litre:

  • 1 litre of filtered water
  • 8 g of tea (black, green or a 50/50 blend)
  • 80 g of sugar
  • 1 SCOBY + 100 ml of starter liquid
1 L
Water
8 g
Tea
80 g
Sugar
Boil the water, remove from the heat, steep the tea for 10 min
Remove the tea, dissolve the sugar
Let it cool down completely (essential!)
Add the SCOBY + 100 ml of starter liquid
Cover with a cloth, ferment 7-14 days at 22-26°C
Taste from day 7, strain when the flavour suits you
Shorter = sweeter. Longer = more tart. Always keep 100 ml + the SCOBY for the next cycle.

🫧 Flavoured second fermentation

Bottle with a maximum of 10% fruit juice. Leave 24-72h at room temperature, then refrigerate.

  • Ginger-lemon: the great classic
  • Peach-basil: summery and refined
  • Raspberry: gorgeous colour
  • Elderflower: floral and delicate
💡The white/beige film on the surface = a new SCOBY = 100% healthy. Mould is green/black/fuzzy.

🍃 Which tea should I use?

  • Black tea: the most traditional, full-bodied kombucha
  • Green tea: more delicate, perfect for beginners
  • 50/50 blend: the ideal balance, recommended
⚠️Avoid flavoured teas (essential oils are toxic for the SCOBY) and pure rooibos.

❄️ Storing the SCOBY

  • Regular use: chain fermentations. The SCOBY lives in its sweetened tea
  • 1-6 month break: leave it in its liquid at room temperature. Add 100 ml of sweetened tea per month
  • SCOBY hotel: stack your spare SCOBYs in a big jar with starter liquid
  • Do not freeze: unlike kefir, the SCOBY does not survive freezing
💡Every fermentation creates a new SCOBY. Give away the extras, it is the kombucha tradition!

🔧 Kombucha troubleshooting

  • No new SCOBY on the surface: temperature too low (below 20°C), not enough starter liquid, or the tea was still warm when the SCOBY went in
  • Mould (green, black, fuzzy, dry): discard the liquid. Try to rescue the SCOBY: fresh sweetened tea, ferment 5 days, then start again for 8 days. Otherwise contact us
  • Brown strands hanging below: normal yeast, a sign of good health. Strain if the taste bothers you
  • Too sweet: fermentation too short, leave it a few more days
  • Vinegar taste: fermentation too long. Use it as homemade vinegar or for cleaning
  • Fruit flies: always cover with a tight cloth and a rubber band. Never leave it open
  • Very thick SCOBY: remove the oldest layers (underneath), keep 1-2 cm of thickness

💪 What is in kombucha

  • Live cultures: lactic bacteria and yeasts
  • Tea polyphenols preserved through fermentation
  • Organic acids: glucuronic and lactic acid, the signature acids of kombucha
  • B vitamins produced by the yeasts during fermentation
  • Enzymes naturally present

Liquid rennet

110,000 units · 1 ml sets 5-10 L of milk

📋 Homemade faisselle (fresh cheese)

Warm 1 L of whole milk (raw or pasteurised, never UHT) to 30-35°C
Dilute 2 to 4 drops of rennet in a little cold, non-chlorinated water
Pour into the milk, stir gently for 30 seconds
Cover and leave untouched for 1 hour
When the milk has set into a block, ladle into cheese moulds
Drain 4 to 12h in the fridge
1 ml
5-10 L of milk
2-4 drops
1 L of milk
50 ml
250-500 L

💡 Tips for success

  • Temperature: below 25°C or above 38°C, rennet stops working
  • UHT milk = failure: the denatured proteins prevent curdling
  • Chlorinated water: deactivates the enzyme, use filtered water
  • Storage: in the fridge, tightly closed, max 12 months
♻️Zero-waste tip: the leftover whey is great for pancakes, soups or watering your plants.

🧑‍🍳 Beyond fresh cheese

  • Herbed fresh cheese: garlic, chives, basil after draining
  • Fresh tomme: light pressing for 24h, ageing 1-2 weeks
  • Homemade mozzarella: hot stretching in 80°C water
  • Ricotta: with the whey, heated to 85°C + a dash of vinegar
  • Paneer: pressed curd, ideal for Indian cooking

🔧 Rennet troubleshooting

  • The curd does not form: UHT milk (does not curdle), temperature outside 30-35°C, chlorinated water used to dilute, or expired rennet
  • Curd too soft: add 1-2 more drops, or let it rest 30 min longer
  • Curd too firm/rubbery: too much rennet or setting time too long. Reduce the dose
  • Bitter taste: too much rennet. Reduce to 2 drops per litre
  • Cloudy whey: normal, it is rich in soluble proteins and minerals

📦 Storing rennet

  • Liquid: in the refrigerator, bottle tightly closed, up to 12 months after opening
  • Do not freeze liquid rennet
  • Out of the fridge: it loses strength. If it was left out for a few hours, put it back in the fridge, it is still usable

Delivery & storage

Shipping, unboxing and storing your live cultures

🚚 Shipping is not a problem

Our live cultures (kefir grains, kombucha SCOBY) are extremely resilient and travel very well at room temperature:

  • Water kefir: easily survives 1 month out of the fridge, even in summer
  • Milk kefir: lasts 1 month in its transport liquid
  • Kombucha SCOBY: protected by its acidic liquid, survives for weeks
  • Rennet: a few hours out of the fridge do not affect it
Thousands of parcels delivered every month across France and Europe. Room-temperature shipping has been our standard from day one, without any issues.

📦 What to do when your parcel arrives

Open the parcel within 24h of receiving it
Take the cultures out of their packaging and check them visually (a slightly sour smell is normal)
Start the activation immediately, or place them in the fridge in their liquid (max 48h)
Do not throw away the transport liquid: it is concentrated kefir/kombucha, perfect as a starter
⚠️Do not panic if the parcel took a few extra days: the cultures handle delivery delays very well. Activate them as usual.

🌡️ Optimal storage conditions

Our ferments are stored and grown under controlled conditions:

  • Storage temperature: 22-24°C (the room temperature of our workshop)
  • Ideal fermentation temperature: 20-25°C for kefir, 22-28°C for kombucha
  • Humidity: no particular constraint
  • Light: away from direct sunlight, a kitchen corner is perfectly fine
💡Temperature is the number 1 success factor. Below 18°C, ferments slow down sharply. Above 30°C, fermentation races ahead.

☀️ Adapting to the season

In summer (25-35°C):

  • Reduce fermentation time by 30 to 50%
  • Water kefir: 12-24h instead of 24-48h
  • Milk kefir: 12-18h instead of 24h
  • Kombucha: taste from day 5
  • Place the jar in the coolest corner of the kitchen

In winter (15-20°C):

  • Increase the fermentation time
  • Place the jar near a source of warmth (radiator, oven)
  • Wrap the jar in a tea towel to hold the warmth
  • Be patient: fermentation takes longer but works

Frequently asked questions

Find your answer fast
All Water kefir Milk kefir Kombucha Rennet Troubleshooting Orders
How long should I ferment my water kefir?WATER KEFIR+
Usually 24 to 48h at 20-25°C. The most reliable sign: the fig rises to the surface. The drink becomes slightly cloudy, fizzy, and most of the sugar is gone.
My water kefir is too sweet, what should I do?WATER KEFIR+
You strained too early. Let it ferment 12 to 24h longer, until the fig clearly floats up.
My water kefir is not fizzyWATER KEFIR+
The fizz comes from the second fermentation in a sealed bottle. Strain, bottle with a little fruit, seal tightly and leave 24-48h at room temperature.
Can I replace the sugar with honey?WATER KEFIR+
No. The grains need sucrose. Honey has antibacterial properties that harm the grains. Raw cane, whole cane or white sugar all work.
Which milk should I use for milk kefir?MILK KEFIR+
Preferably organic whole milk, pasteurised or raw. Absolutely no UHT or skimmed milk. Plant milk is not suitable.
Is milk kefir suitable if I am sensitive to lactose?MILK KEFIR+
Fermentation reduces the lactose content by 70 to 80%. Many people with mild sensitivity find it comfortable. If you are severely intolerant, water kefir is the better choice.
Can milk kefir be turned into fresh cheese?MILK KEFIR+
Yes! Let it ferment 48h, then pour it into a fine cloth and hang it. Drain 12-24h in the fridge for a creamy labneh.
My milk kefir grains float, is that normal?MILK KEFIR+
Yes, completely normal. The CO2 produced by the grains makes them rise.
How long should I ferment my kombucha?KOMBUCHA+
7 to 14 days depending on the temperature and your taste. Shorter = sweeter. Longer = more tart. Taste from day 7.
How do I rescue a culture that got mouldy?KOMBUCHA+
Keep the original disc, run a new fermentation for 5 days, then start again with the disc + 100 ml of the liquid for 8 days. If it does not work, a new culture will be sent to you.
My SCOBY sank to the bottom, is that a problem?KOMBUCHA+
No. The SCOBY can float, sink or hover in between. What matters is that a new disc forms on the surface.
My kombucha tastes like vinegar, what can I do?KOMBUCHA+
Fermentation went too long. Reduce by 2-3 days, or dilute with fruit juice. You can also use it as homemade vinegar!
Does kombucha contain alcohol?KOMBUCHA+
Very little: 0.5 to 1% max, below the threshold of a non-alcoholic drink.
How much liquid rennet for 1 litre of milk?RENNET+
2 to 4 drops of our high-concentration rennet (110,000 U) for 1 L. Dilute in a little cold, non-chlorinated water.
My curd is not forming, why?RENNET+
Frequent causes: UHT milk (does not curdle), wrong temperature (must be 30-35°C), chlorinated water used to dilute, or expired rennet.
I can see mould (green, black, fuzzy)PROBLEM+
Kefir: throw everything away, a new culture will be sent (lifetime guarantee). Kombucha: first try the 5-day + 8-day rescue method.
I am going on holiday, how do I store my grains?PROBLEM+
1 week: jar with water + sugar in the fridge. 2-4 weeks: change the bath every 15 days. Longer: freeze the rinsed and dried grains (6 months max).
My grains are shrinking or disappearingPROBLEM+
Check: chlorinated water (switch to filtered water), refined white sugar (try raw cane sugar), reactive metal (switch to plastic), UHT milk (switch to whole non-UHT milk).
What are the delivery times?ORDERS+
France: 3-5 days (standard), 24-48h (express). Belgium/Switzerland: 4-7 days. Italy/Spain: 5-8 days. Rest of Europe: 7-12 days.
How does the lifetime culture guarantee work?ORDERS+
If your cultures become inactive despite correct use, we send new ones for free. Send a photo + description by email, answer within 24h.
Which payment methods do you accept?ORDERS+
Credit and debit cards (Visa, Mastercard, AmEx), PayPal, Apple Pay, Google Pay. Payments secured by Stripe.
Can I use tap water for water kefir?WATER KEFIR+
Yes, but chlorinated water slows fermentation. Let the water sit 2h in an open jug so the chlorine evaporates, or use filtered/spring water.
How long does water kefir keep once strained?WATER KEFIR+
In the refrigerator, 5 to 7 days in a closed bottle. The taste evolves: it gets more tart over time. Ideally, drink it within 3 days.
My grains changed colour, is that normal?WATER KEFIR+
Yes. Grains take on the colour of the ingredients: brownish with raw cane sugar, pinkish with red fruits. Only mould (green, black, fuzzy) is a problem.
Can I make milk kefir with goat or sheep milk?MILK KEFIR+
Yes, and it is excellent! Goat milk gives a lighter kefir. Sheep milk gives a creamier, richer kefir. Always whole milk, never UHT.
How do I know my milk kefir is ready?MILK KEFIR+
The milk has thickened (drinking-yogurt texture), with a light sweet-and-sour smell, and sometimes visible whey separation on the sides of the jar. Taste it: it should be creamy and tangy.
Can I make kombucha with loose leaf tea?KOMBUCHA+
Yes, it is even recommended! Use 8 g of loose leaf tea (black, green or a blend) for 1 litre. Make sure you strain the leaves out well before adding the SCOBY.
My kombucha smells like vinegar, is it still good?KOMBUCHA+
Yes, it is safe but very fermented. Use it as kombucha vinegar (dressings, marinades) or as starter liquid for your next batch.
Is the rennet vegetarian?RENNET+
Our rennet is animal-based (extracted from calf abomasum), the traditional and most effective form. For a vegetarian alternative, some shops sell microbial rennet.
Can I use the rennet with pasteurised supermarket milk?RENNET+
Yes, pasteurised milk works very well. Only UHT milk (sterilised at high temperature) is unsuitable, because its proteins are too denatured to coagulate properly.
My parcel arrived warm / late, are the cultures still good?PROBLEM+
The cultures are resilient and survive shipping very well (up to 5-7 days). Activate them as soon as they arrive. If nothing happens after 5 activation cycles, contact us for a free replacement.
Can I give kefir to my children or pets?PROBLEM+
Water kefir can be given to children from 1 year old in small amounts. Milk kefir follows the same rules as dairy products. As for pets, dogs and cats enjoy milk kefir in small doses.

🛡️Regulatory compliance & production standardsOur live ferments (kefir grains, kombucha SCOBY) are produced and stored at room temperature (22-24°C), in line with good manufacturing practices for microbial cultures. These conditions are optimal to preserve the vitality and activity of the ferments. Every batch goes through an HACCP quality check: full traceability, visual inspection, temperature monitoring and packaging conditions.
